Ingredients

Scale

Protein & Vegetables

  • 1 lb lean ground turkey
  • 1 head romaine or butter lettuce leaves (crisp and whole for wrapping)
  • 2 garlic cloves, finely chopped
  • 1 tablespoon fresh ginger, finely chopped
  • 3 green onions, finely sliced
  • 1/2 cup water chestnuts, finely chopped

Sauces & Oils

  • 2 tablespoons soy sauce or tamari (gluten-free if needed)
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil

Optional

  • Red pepper flakes, to taste (optional for heat)

Instructions

  1. Prepare Ingredients: Chop the garlic, ginger, green onions, and water chestnuts finely. Rinse and separate lettuce leaves, keeping them whole and crisp for wrapping. Measure sauces and have all ingredients ready.
  2. Cook the Turkey: Heat a drizzle of sesame oil in a large skillet over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute. Add ground turkey, breaking it apart with a spoon, and cook until browned and fully cooked through, about 5-7 minutes.
  3. Add Flavor and Texture: Stir in soy sauce, hoisin sauce, and chopped water chestnuts. Mix well and cook for an additional 2 minutes to allow flavors to meld while keeping the water chestnuts crunchy.
  4. Finish with Green Onions: Remove the skillet from heat, then fold in the chopped green onions and a pinch of red pepper flakes if using, adding fresh brightness and desired heat.
  5. Assemble the Wraps: Spoon the turkey mixture onto individual lettuce leaves. Fold or roll the leaves around the filling and serve immediately while warm and crisp.

Notes

  • Use fresh, crisp iceberg or butter lettuce to avoid sogginess and keep wraps sturdy.
  • Cook turkey in batches if needed to prevent overcrowding the pan for even browning.
  • Finely chop ingredients like water chestnuts and green onions for uniform flavor in every bite.
  • Adjust soy or hoisin sauces last after tasting to perfectly suit your preference.
  • Store lettuce leaves wrapped in damp paper towels in the fridge to maintain crispness until serving.
