  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • Salt, to taste

Cheese & Herbs

  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh parsley or basil, chopped

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
  2. Blanch the Asparagus: Trim tough ends off the asparagus and cut into bite-sized pieces. Blanch in boiling water for 2-3 minutes until bright green and tender-crisp, then immediately transfer to an ice bath to maintain freshness and color.
  3. Make the Dressing: In a small bowl, whisk together fresh lemon juice, minced garlic, olive oil, salt, and pepper. This dressing brightens the salad and brings the flavors together.
  4. Combine the Ingredients: In a large bowl, gently toss the cooled pasta, asparagus pieces, halved cherry tomatoes, thinly sliced red onion, and crumbled feta. Drizzle the dressing over and toss to coat evenly.
