Instructions

  1. Prepare the Potatoes: Wash the potatoes thoroughly and peel if preferred (leaving the skin on adds texture and nutrients). Cut them into evenly sized wedges to ensure even cooking and crispy edges.
  2. Mix the Marinade: In a large bowl, combine extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper. Stir well to blend all the fragrant flavors.
  3. Toss Potatoes in Marinade: Add the potato wedges to the bowl and toss until each piece is thoroughly coated with the lemony, herby mixture, infusing them with authentic Greek flavors.
  4. Baking with Water: Pour the coated potatoes into a baking dish and add enough water or vegetable broth to cover the bottom about halfway up the potatoes. This steams and softens the potatoes while baking.
