Ingredients

Scale

Protein

  • 2 cups cooked chicken, shredded or diced

Vegetables

  • 3 medium baked potatoes, peeled and chopped
  • 2 cups broccoli florets, steamed or blanched
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Dairy & Sauces

  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup sour cream
  • 1/2 cup milk or cream
  • 2 tablespoons butter

Seasonings

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Prepare the Ingredients: Bake potatoes until tender, then peel and cube them. Steam or blanch broccoli florets until bright green and slightly crisp. Cook and shred chicken, using leftover rotisserie or grilled chicken for convenience.
  2. Make the Creamy Sauce: In a medium saucepan, melt butter over medium heat. Sauté finely chopped onions and garlic until fragrant and translucent. Add sour cream, milk, salt, pepper, and paprika, stirring constantly until the sauce is smooth and creamy. Remove from heat.
  3. Combine Ingredients: In a large mixing bowl, gently fold together the cooked chicken, chopped potatoes, broccoli, and half of the cheese blend with the creamy sauce, ensuring everything is evenly coated and well combined.
  4. Assemble and Bake: Transfer the mixture into a greased casserole dish. Sprinkle the remaining cheese evenly on top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until the cheese is melted, bubbly, and beginning to turn golden brown.
  5. Rest and Serve: Let the casserole rest for 5-10 minutes after baking to allow it to set, making serving easier and enhancing flavor melding.

Notes

  • Precook potatoes to ensure they hold shape and absorb sauce better.
  • Do not overcook broccoli to maintain texture and vibrant color.
  • Use sharp cheddar for depth of flavor balancing the creaminess.
  • Mix mozzarella with cheddar for gooey, stretchy texture and rich taste.
  • Allow casserole to rest before serving to firm up and slice neatly.
