Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz fresh shrimp, peeled and deveined

Sauce

  • 1/3 cup creamy peanut butter
  • 1/2 cup coconut milk or heavy cream
  • 12 tablespoons sriracha or chili sauce (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon lime juice
  • 1 tablespoon honey or brown sugar

Cooking

  • 2 tablespoons vegetable oil

Garnishes

  • 1/4 cup chopped cilantro
  • 2 green onions, sliced
  • Optional: crushed peanuts (for added crunch)

Instructions

  1. Prepare the Protein: Cut the chicken breasts into bite-sized pieces. Lightly season with salt and pepper. Heat vegetable oil in a skillet over medium-high heat. Cook the chicken pieces until golden and cooked through, about 5–7 minutes. Remove the chicken from the skillet and set aside. Next, sauté the shrimp in the same skillet for 2–3 minutes until they turn pink and firm. Remove from heat and set aside.
  2. Make the Creamy Peanut Sauce: Reduce the heat to medium. Add minced garlic and ginger to the same skillet and cook briefly until fragrant. Whisk in the peanut butter, coconut milk (or heavy cream), lime juice, sriracha, and honey. Stir continuously until the sauce is smooth and creamy, about 3–5 minutes.
  3. Combine and Simmer: Return the cooked chicken and shrimp to the skillet with the peanut sauce. Stir gently to coat the protein evenly. Let the mixture simmer for a couple of minutes to allow the flavors to meld and the sauce to thicken slightly.
  4. Garnish and Serve: Remove from heat. Sprinkle with chopped cilantro and sliced green onions. Optionally, add crushed peanuts for extra texture. Serve hot over steamed jasmine rice, coconut rice, or your favorite noodles.

Notes

  • Choose fresh chicken and shrimp for the best flavor and texture.
  • Adjust the amount of sriracha to control the spice level according to your preference.
  • Use smooth peanut butter for a creamier sauce; avoid chunky varieties.
  • Do not overcook shrimp to prevent rubbery texture.
  • Prepare all ingredients ahead to streamline the cooking process and maintain fresh flavors.
