Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • 1 tablespoon oil (for cooking)

Slider Buns

  • 68 soft slider buns

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 12 teaspoons sriracha (adjust to taste)

Cabbage Slaw

  • 2 cups shredded cabbage or coleslaw mix
  • 2 tablespoons lime juice
  • 2 green onions, chopped

Optional Garnishes

  • Chopped cilantro
  • Sliced jalapeños
  • Lime wedges
  • Toasted sesame seeds

Instructions

  1. Cook the Chicken: Season the chicken breasts with salt, pepper, and garlic powder. Heat a skillet over medium heat with a splash of oil. Cook the chicken for about 5-7 minutes per side until golden brown and fully cooked. Let the chicken rest briefly before shredding or slicing thinly for the sliders.
  2. Prepare the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Adjust the amounts based on your desired sweetness and spice level. Mix thoroughly until smooth and creamy.
  3. Make the Slaw: Toss shredded cabbage with lime juice and chopped green onions. This will add a bright, crunchy element that balances the richness of the sauce and chicken.
  4. Assemble the Sliders: Spread a generous layer of bang bang sauce on the bottom half of each slider bun. Add a layer of shredded chicken, then top with the prepared slaw. Finish by placing the bun top on each slider. Serve immediately while buns remain soft and chicken juicy.

Notes

  • Use Warm Buns: Lightly toast slider buns before assembling to prevent sogginess and add a slight crunch.
  • Don’t Overcook Chicken: Monitor cooking time closely to keep chicken juicy or poach gently instead of frying.
  • Balance Sauce Flavors: Taste the bang bang sauce and tweak sweet chili sauce and sriracha until you find your perfect flavor balance.
  • Pre-Mix Slaw Dressing: Dress the slaw just before assembling to keep it crisp and fresh, avoiding sogginess.
  • Prepare Sauce Ahead: Make the bang bang sauce a day in advance to deepen the flavors.
  • Storage: Store chicken and sauce separately in airtight containers in the fridge for up to 3 days. Keep buns sealed to maintain softness. Avoid freezing assembled sliders.
