Sauce

  • 1 cup heavy cream

Instructions

  1. Prepare the Ingredients: Peel and devein the shrimp if not prepped already. Slice the Andouille sausage into bite-sized pieces. Chop the bell peppers, onion, and mince the garlic. Have your pasta ready to cook.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine or linguine according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of pasta water for later use, and set pasta aside.
  3. Sauté the Sausage and Vegetables: Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned and slightly crispy, about 4-5 minutes. Remove sausage and set aside. In the same skillet, add butter, then sauté the chopped onion, garlic, and bell peppers until softened and fragrant, about 3-4 minutes.
  4. Cook the Shrimp: Add the shrimp into the skillet with the sautéed vegetables. Sprinkle with Cajun seasoning and cook for 2-3 minutes per side or until shrimp turn pink and are cooked through. Remove from heat and combine shrimp with the sausage.
  5. Make the Cajun Cream Sauce: Reduce heat to medium. Pour in the heavy cream and stir in additional Cajun seasoning if desired. Let the sauce simmer gently for about 2 minutes to thicken slightly. Stir in freshly grated Parmesan cheese until melted and silky.
  6. Combine Pasta with Sauce and Protein: Return the cooked shrimp and sausage to the skillet with the cream sauce. Add the drained pasta and toss everything together until evenly coated. If sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
