Ingredients

Scale

Proteins

  • 4 chicken thighs or breasts (about 1.5 lbs), skinless and boneless

Rice and Grains

  • 1 1/2 cups long-grain white or jasmine rice

Vegetables & Aromatics

  • 1 red, yellow, or green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 scotch bonnet or habanero pepper, finely chopped (use less for milder heat)

Liquids & Oils

  • 2 cups chicken broth
  • 2 tablespoons vegetable or coconut oil
  • 1 tablespoon fresh lime juice

Herbs & Spices

  • 2 teaspoons Caribbean seasoning blend (allspice, thyme, paprika, cinnamon, nutmeg)
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Prepare the Marinade and Chicken: Mix the Caribbean seasoning blend with lime juice, minced garlic, chopped scotch bonnet pepper, and a drizzle of oil. Toss the chicken pieces in this marinade and let them soak for at least 30 minutes to develop juicy, flavorful meat.
  2. Sear the Chicken: Heat oil in a large skillet over medium-high heat. Brown the chicken pieces on all sides to seal in flavors and create a crust, but do not cook through completely. Remove and set aside.
  3. Sauté the Aromatics and Veggies: In the same pan, add diced onions, garlic, and bell peppers. Cook until softened and fragrant, scraping up any browned bits left from the chicken.
  4. Toast the Rice and Add Broth: Stir the rice into the vegetables and toast lightly for 2 minutes. Pour in chicken broth, add a pinch of salt, and bring to a low boil.
  5. Combine and Simmer: Nestle the seared chicken on top of the rice. Cover the pan and reduce heat to low. Let simmer gently until rice is cooked and chicken is tender, about 20 minutes.
  6. Finish with Fresh Herbs and Serve: Once done, sprinkle chopped cilantro or parsley over the dish and squeeze additional lime juice to brighten the flavors before serving.

Notes

  • Marinate chicken overnight for richer flavor.
  • Ensure proper browning of chicken to add depth.
  • Use a tight-fitting lid to trap steam and cook rice perfectly.
  • Let the dish rest for 5 minutes off the heat before serving.
  • Taste and adjust seasoning at the end to balance salt, spice, and acidity.
