Instructions

  1. Prepare the Cauliflower: Wash and thoroughly dry the cauliflower, then finely grate it or pulse it in a food processor until it resembles rice grains. This texture helps the fritters hold together without becoming mushy.
  2. Remove Excess Moisture: Place the grated cauliflower in a clean kitchen towel and squeeze out as much liquid as possible. Getting rid of moisture is key to crispy fritters without sogginess.
  3. Mix the Batter: In a bowl, combine the drained cauliflower with beaten eggs, gluten-free flour or breadcrumbs, finely chopped herbs, grated cheese if using, garlic, onion, and seasonings. Stir until everything is evenly combined into a thick mixture.
  4. Shape the Fritters: Using your hands or a spoon, scoop small portions of the mixture and flatten them gently into patties about 2–3 inches wide for even cooking.
  5. Cook Until Golden: Heat olive oil or butter in a non-stick skillet over medium heat. Cook the fritters for 3–4 minutes on each side or until they turn beautifully golden and crisp. Drain on paper towels before serving.
