Flan Custard
- 225g (8 oz) Cream Cheese, softened
- 1 can (395g / 14 oz) Sweetened Condensed Milk
- 1 cup (240ml) Whole Milk
- 4 large Eggs, at room temperature
- 1 tsp Vanilla Extract
Caramel
- Prepare the Caramel: Melt sugar in a saucepan over medium heat until it turns golden brown and caramelizes. Quickly pour the caramel into your flan mold or individual ramekins and swirl to coat the bottom evenly. This will create the delicious caramel layer that hardens as it cools.
- Mix the Custard: In a large mixing bowl, whisk together the cream cheese and sweetened condensed milk until smooth and lump-free. Then, add the whole milk, eggs, and vanilla extract, combining everything gently but thoroughly to maintain a silky texture.
- Pour and Prepare for Baking: Pour the custard mixture over the caramel-coated mold carefully. Place the mold inside a larger baking dish and add hot water to create a water bath. This indirect heat method helps the flan cook evenly and develop its smooth consistency.
- Bake the Flan: Bake at 325°F (160°C) for 50 to 60 minutes or until the flan is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature before refrigeration.
- Chill and Serve: Once cooled, refrigerate the Cheese Flan for at least 4 hours or overnight. To serve, run a knife around the edges of the flan, invert onto a plate, and watch the caramel sauce cascade beautifully over the flan.
Notes
- Ensure eggs and cream cheese are at room temperature for a smoother custard.
- Melt sugar slowly to avoid burning and achieve perfect caramel color and flavor.
- Use a water bath (bain-marie) to prevent cracking and ensure even cooking.
- Remove the flan from the oven while still slightly jiggly to preserve creamy texture.
- Refrigerate overnight for the best firm yet silky set and enhanced flavors.
