Cheeseburger Soup

Cheeseburger Soup is a creamy, hearty comfort food that combines the savory flavors of a classic cheeseburger into a warm, soul-satisfying bowl. Packed with ground beef, sharp cheddar cheese, potatoes, and fresh vegetables, this easy one-pot soup is perfect for cozy dinners, customizable for all tastes, and ideal for leftovers.

Ingredients

Scale

Meat

  • 1 lb ground beef

Vegetables

  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 2 cups peeled, diced potatoes (preferably Russets)

Liquids & Dairy

  • 4 cups beef broth (gluten-free if necessary)
  • 2 cups milk or cream
  • 2 cups shredded sharp cheddar cheese

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Optional herbs and spices (such as cayenne pepper or hot sauce for heat)

Instructions

  1. Brown the Ground Beef: Heat a large pot over medium heat and cook the ground beef until browned and fully cooked. Break it into small crumbles while cooking and drain excess fat to keep the soup from being greasy.
  2. Sauté Aromatics and Vegetables: Add diced onions, carrots, celery, and minced garlic to the pot with the beef. Cook for 5 to 7 minutes until the vegetables are softened and fragrant, building the soup’s flavor base.
  3. Add Potatoes and Broth: Stir in peeled, diced potatoes and pour in the beef broth. Bring to a boil, then reduce heat and simmer for 12-15 minutes until the potatoes are tender.
  4. Stir in Dairy and Cheese: Lower the heat and add milk or cream to create a creamy base. Slowly stir in shredded cheddar cheese off the heat or on low heat until melted and incorporated, giving the soup its signature cheeseburger flavor.
  5. Season and Serve: Season with salt, pepper, and any preferred herbs or spices. Mix well and heat through gently. Serve with optional garnishes like chopped green onions, bacon bits, or shredded lettuce.

Notes

  • Use sharp aged cheddar cheese for a bold flavor that enhances the soup.
  • Add cheese slowly off the heat or on low heat to avoid grainy texture.
  • Russet potatoes are recommended because they break down slightly and naturally thicken the soup.
  • Use good-quality or homemade beef broth for the richest flavor.
  • Avoid boiling the soup after adding dairy to prevent curdling.
