Instructions

  1. Prepare the Ingredients: Slice the chicken breast or thighs into thin strips for quick cooking and seasoning absorption. Also, slice the bell peppers and onions into thin, even strips to ensure they sauté quickly and evenly.
  2. Season and Cook the Chicken: Heat olive oil or butter in a skillet over medium heat. Add the chicken strips, season with salt, pepper, and garlic powder, and cook for 5-7 minutes until the chicken is fully cooked and lightly browned.
  3. Sauté the Vegetables: In the same skillet, add a little more oil if needed. Add the sliced onions and bell peppers and cook for about 5 minutes until the vegetables are soft and slightly caramelized. For the last minute, mix them with the cooked chicken to blend the flavors.
  4. Add Cheese: Lower the heat and layer slices of provolone or your chosen cheese over the chicken and vegetables. Cover the skillet with a lid and let the cheese melt for 2-3 minutes.
  5. Toast the Rolls: While the cheese is melting, slice the hoagie rolls and lightly toast them in the oven or on a pan until crisp but still soft enough to hold the filling.
  6. Assemble and Serve: Load the cheese-covered chicken and sautéed veggies onto the toasted rolls. Optionally, add sauces like mayonnaise, hot sauce, or garlic aioli. Serve immediately while hot and melty.
