Instructions

  1. Prep the Ingredients: Chop the onions, carrots, celery, and potatoes into bite-sized pieces. Mince the garlic finely and cut the chicken into uniform chunks for even cooking.
  2. Brown the Chicken: Heat olive oil or butter in a large pot over medium-high heat. Add the chicken pieces and brown them on all sides until golden, locking in flavor. Remove and set aside.
  3. Sauté the Vegetables: In the same pot, add the onion, carrots, and celery, cooking until softened and fragrant, about 5 minutes. Stir in the garlic and cook for another minute to develop aroma.
  4. Build the Stew Base: Add tomato paste and cook briefly to deepen its flavor. Then pour in chicken broth, scraping any browned bits from the pot for extra richness. Return the browned chicken to the pot.
  5. Add Potatoes and Herbs: Stir in the potatoes, thyme sprigs, and bay leaf. Bring everything to a gentle boil, then reduce heat to low and simmer covered for 25-30 minutes, until chicken is tender and potatoes are cooked through.
  6. Final Seasoning and Serve: Remove the bay leaf and thyme stems. Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley, then serve piping hot.
