Instructions

  1. Prepare the Zucchini Noodles: Wash the zucchinis and trim the ends. Use a spiralizer or vegetable peeler to create long, thin noodles. Place the zucchini noodles on a paper towel to absorb excess moisture and prevent sogginess.
  2. Cook the Chicken: Season the bite-sized chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium heat, add the chicken, and cook for 5-7 minutes until golden and fully cooked. Remove the chicken and set aside.
  3. Sauté the Garlic and Tomatoes: In the same skillet, add a little more olive oil if needed and sauté the minced garlic for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 3-4 minutes until they soften and release their juices.
