Salad Ingredients

  • 2 cooked chicken breasts, shredded or sliced
  • 3 cups shredded Napa cabbage
  • 1 cup julienned carrots
  • 3 sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup mandarin oranges (optional)
  • 1 cup crunchy chow mein noodles or crispy rice noodles
  • 2 tablespoons toasted sesame seeds

Dressing Ingredients

  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated fresh ginger

Instructions

  1. Prepare the Chicken: Cook chicken breasts by poaching, grilling, or baking until fully cooked and juicy. Let cool, then shred or slice into bite-sized pieces.
  2. Chop and Shred Vegetables: Wash and dry all vegetables. Finely shred the Napa cabbage, julienne the carrots, slice green onions, and chop cilantro.
  3. Mix the Dressing: In a small bowl, whisk together soy sauce, rice vinegar, toasted sesame oil, honey (or sugar), minced garlic, and grated ginger until well combined and balanced.
  4. Combine Ingredients: In a large bowl, toss the shredded chicken, vegetables, and dressing until evenly coated. Add crunchy noodles and toasted sesame seeds just before serving to maintain their crispness.
  5. Chill and Serve: Refrigerate the salad for a few minutes to let the flavors meld or serve immediately for maximum freshness and crunch. Garnish with extra green onions or sesame seeds if desired.

Notes

  • Use fresh, crisp vegetables to enhance texture and flavor.
  • Add dressing gradually to avoid sogginess.
  • Keep crunchy elements like noodles and nuts separate until serving.
  • Prep chicken and vegetables ahead to save time on busy days.
  • Adjust the dressing’s sweetness or acidity to your taste preference.
