Instructions

  1. Prepare Your Workspace: Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even cooling. Measure and have all ingredients ready before starting to cook.
  2. Melt the Butter and Sugar: In a heavy-bottomed saucepan over medium heat, melt the unsalted butter. Add granulated sugar, light corn syrup, and salt, stirring constantly to combine ingredients and create the base for your toffee.
  3. Cook to the Right Temperature: Using a candy thermometer, cook the mixture while stirring constantly until it reaches 300°F (hard crack stage). This is critical to achieve the signature solid and breakable texture of classic toffee.
  4. Add Vanilla and Pour: Remove the saucepan from heat and quickly stir in the vanilla extract. Immediately pour the hot toffee mixture evenly onto the prepared baking sheet, smoothing the surface with a spatula while still warm.
  5. Add Toppings: Evenly sprinkle chopped nuts over the warm toffee if desired. Immediately add chocolate chips on top; their heat will melt the chocolate. Once softened, spread the chocolate smoothly across the surface.
