Filling Ingredients

  • 1 cup cooked chicken or turkey, diced
  • 2 spring onions or a small bunch of chives, chopped
  • 3 tablespoons mango chutney
  • 3/4 cup (about 75g) grated Cheddar or Gruyère cheese

Instructions

  1. Prepare the crust: Roll out the shortcrust pastry to fit a 9-inch tart or quiche pan. Press it gently into the pan, trim any excess pastry, and chill in the refrigerator for 20 minutes to prevent shrinking during baking.
  2. Blind bake the pastry: Line the chilled pastry shell with parchment paper and fill with baking beans or rice to weigh it down. Bake at 180°C (350°F) for 15 minutes. Remove the weights and parchment, then bake for another 5 minutes until the base is lightly golden and set.
  3. Prepare the filling: In a mixing bowl, whisk together the eggs, cream, turmeric, curry powder, salt, and pepper until smooth. Gently fold in the diced cooked chicken or turkey, chopped spring onions or chives, mango chutney, and grated cheese until evenly combined.
  4. Assemble and bake: Pour the filling mixture evenly into the pre-baked pastry shell. Bake in the oven at 180°C (350°F) for 25-30 minutes, or until the custard is set and the top is lightly golden.
  5. Cool and serve: Allow the quiche to cool for at least 10 minutes before slicing. This resting period helps the filling set and ensures clean, neat slices for serving.
