Ingredients

Scale

Meat

  • 1 lb ground beef (lean or regular)

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 12 bell peppers, chopped
  • 1 cup corn kernels (fresh, frozen, or canned)

Beans

  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed

Tomatoes & Broth

  • 1 (14.5 oz) can diced tomatoes with juice
  • 4 cups beef broth

Spices

  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Brown the Ground Beef: Heat a large pot or Dutch oven over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook until fully browned with no pink remaining. This creates the savory base of your soup.
  2. Sauté Aromatics: Remove excess grease if necessary. Add chopped onions, garlic, and bell peppers to the pot. Cook about 5 minutes until the vegetables soften and become fragrant, adding depth to the flavor.
  3. Add Beans, Corn, and Tomatoes: Stir in the drained beans, corn kernels, and diced tomatoes with their juice. These ingredients add heartiness, sweetness, and acidity, balancing the richness of the beef.
  4. Pour in the Broth and Spices: Pour in the beef broth. Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the mixture. Stir well and bring the soup to a simmer to combine flavors.
  5. Simmer Until Flavors Blend: Lower heat and simmer gently for 20-30 minutes to deepen flavors, tenderize ingredients, and slightly thicken the broth.

Notes

  • Use fresh spices for the best flavor, especially chili powder and cumin.
  • Do not skip browning the ground beef to build rich umami flavor.
  • If the soup becomes too thick, add a little water or broth while simmering.
  • Let the soup rest off heat for 10 minutes before serving to enhance flavor fusion.
  • Mix different beans to add texture and nutritional variety.
