Instructions

Pour the hot cream mixture over the chopped chocolate and let it sit for a minute to soften the chocolate.
  2. Stir Until Smooth: Using a whisk or spatula, gently stir the mixture until the chocolate and cream blend into a glossy, smooth ganache. Add the vanilla extract and mix thoroughly to form the creamy ganache that is the heart of your truffles.
  3. Chill the Ganache: Cover the bowl with plastic wrap and refrigerate the ganache for at least 2 hours, or until firm enough to scoop and shape without melting under your hands.
  4. Form the Truffles: Once chilled, use a small cookie scoop or spoon to portion out bite-sized rounds of ganache. Quickly roll each between your palms to create smooth balls. If the ganache softens too much, chill again to firm up.
