Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/4 cup granulated sugar
  • 1 cup warm milk (about 110°F)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 tsp salt

Filling Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup unsweetened cocoa powder or 3 oz melted bittersweet chocolate

Glaze Ingredients

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 12 tbsp milk (adjust for desired consistency)

Instructions

  1. Prepare the Dough: Warm the milk to about 110°F. Dissolve the yeast and 1 tablespoon of granulated sugar into the milk and let it activate for 5-10 minutes until frothy. In a large bowl, combine melted butter, eggs, remaining sugar, and salt. Add the yeast mixture and gradually stir in flour until a smooth, slightly sticky dough forms. Knead the dough on a floured surface for 8-10 minutes until elastic and smooth. Place the dough in a greased bowl, cover, and let it rise in a warm spot until doubled in size, about 1-1.5 hours.
  2. Make the Chocolate Cinnamon Filling: In a medium bowl, mix together softened butter, brown sugar, cinnamon, and cocoa powder or melted chocolate until smooth and spreadable. This will create the rich, gooey filling inside the rolls.
  3. Roll Out the Dough and Spread Filling: Punch down the risen dough and place it on a lightly floured surface. Roll it into a large rectangle approximately 15×9 inches. Evenly spread the chocolate cinnamon filling over the entire surface, reaching all edges for consistent flavor.
  4. Shape the Rolls: Starting from one of the longer edges, tightly roll the dough into a log. Using a sharp knife, cut the log into slices about 1 to 1.5 inches thick. Place the slices cut side up in a greased baking dish, leaving room for expansion.
  5. Second Rise and Bake: Cover the baking dish with a kitchen towel and let the rolls proof for 30-45 minutes until puffy. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until they turn golden brown and are cooked through.
  6. Glaze and Serve: While the rolls are still warm, prepare the glaze by beating together cream cheese, powdered sugar, and milk until smooth. Spread a generous layer of glaze over the rolls. Serve warm to enjoy the soft, melty texture and rich flavors.

Notes

  • Use fresh, active yeast to ensure the best rise and fluffiness.
  • Do not add too much flour; keep the dough slightly sticky for soft rolls.
  • Roll the dough tightly to create more layers and prevent filling leakage.
  • Let the rolls rise twice for the best tender and fluffy texture.
  • Apply the glaze while the rolls are warm so it soaks in and creates a luscious coating.
