Ingredients

Scale

Main Ingredients

  • 4 cups Rice Krispies cereal (or gluten-free rice cereal as needed)
  • 3 tablespoons butter
  • 1 package (10 oz) mini marshmallows
  • Food coloring (pastel colors of your choice)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Prepare Your Workstation: Line a baking sheet with parchment paper or a silicone mat to prevent sticking and make cleanup easier. Lightly grease your hands with butter or cooking spray to handle the sticky mixture comfortably.
  2. Melt Butter and Marshmallows: In a large saucepan over low heat, melt the butter. Add the mini marshmallows and stir continuously until fully melted and smooth. Stir in vanilla extract if using for extra flavor.
  3. Add Food Coloring: Remove the melted marshmallow mixture from heat. Quickly stir in your chosen food coloring to create bright Easter hues. For multiple colors, divide mixture and color separately.
  4. Mix in Rice Krispies: Gently fold the Rice Krispies cereal into the colored marshmallow mixture until fully coated. Work quickly to ensure even coverage while maintaining crunch.
  5. Shape the Eggs: Using greased hands, scoop portions of the mixture and shape into egg-shaped figures. Press gently but firmly, then place them on the prepared baking sheet to set.
  6. Let Them Cool and Set: Allow the Easter Rice Krispies Eggs to cool completely at room temperature for about 20-30 minutes until they hold their shape. Once set, serve or decorate as desired.

Notes

  • Use fresh marshmallows, as older ones can be difficult to melt and less sticky.
  • Grease your hands generously to prevent the mixture from sticking while shaping.
  • Work quickly because the marshmallow mixture sets fast after removing from heat.
  • Add food coloring after melting marshmallows for the brightest, most vibrant colors.
  • Store in airtight containers at room temperature to keep eggs fresh and chewy for up to 3 days.
