Ready in just 10 minutes, this recipe offers bold Asian-inspired flavors using simple ingredients for a vibrant and nutritious vegetable dish perfect for busy weeknights or anytime you want a fresh, tasty side.

Ingredients

Main Ingredients

  • Baby bok choy – 1 pound (about 4-5 heads), washed and cut lengthwise into halves or quarters
  • Fresh garlic – 3 cloves, minced
  • Red chili flakes – 1/2 teaspoon (adjust to taste)
  • Soy sauce – 2 tablespoons
  • Sesame oil – 1 teaspoon
  • Vegetable oil – 1 tablespoon

Optional Ingredients

  • Cornstarch – 1 teaspoon mixed with 1 tablespoon water (for a thicker sauce)
  • Toasted sesame seeds or chopped peanuts – for garnish
  • Fresh cilantro or green onions – for garnish

Instructions

  1. Prepare the Bok Choy: Wash the baby bok choy thoroughly to remove any dirt trapped between the stalks. Cut each bok choy head lengthwise into halves or quarters depending on size, ensuring even cooking and maintaining a satisfying crunch.
  2. Heat the Oil and Sauté Garlic: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it to avoid bitterness.
  3. Cook the Bok Choy: Add the prepared bok choy to the skillet. Stir quickly to coat them in the garlic-infused oil. Cook for 3–4 minutes, until the stems are tender but still crisp and leaves have slightly wilted.
  4. Add Spices and Sauce: Sprinkle the red chili flakes evenly over the bok choy for a spicy kick. Pour in the soy sauce and drizzle the sesame oil. Toss everything together to coat the greens thoroughly. If you prefer a thicker sauce, add the cornstarch slurry now and stir until slightly thickened.
  5. Final Toss and Serve: Give the bok choy one last quick toss to combine all ingredients evenly. Serve immediately while hot and fresh for the best flavor and texture.

Notes

  • Use baby bok choy or young stalks for tender texture; older stalks may need longer cooking.
  • Adjust chili flakes according to spice preference; start with half the amount if unsure.
  • Do not overcook to keep the bok choy crisp and vibrant.
  • Add garlic to hot oil just before adding bok choy to avoid burning.
  • Opt for toasted sesame oil for richer, nutty flavor.
  • Substitute soy sauce with tamari or coconut aminos for gluten-free variation.
