Ingredients

Scale

Main Ingredients

  • 1 (5 oz) can of high-quality tuna packed in water, drained thoroughly
  • 1/2 cup panko breadcrumbs (or gluten-free breadcrumbs for gluten-free option)
  • 1 large egg
  • 2 green onions, chopped
  • 2 tablespoons spicy mayo or sriracha (adjust to heat preference)
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons cooking oil for frying

Optional Variations

  • Fresh tuna, finely chopped and seared (replace canned tuna)
  • Chopped fresh herbs such as cilantro, parsley, or dill
  • Finely grated zucchini or carrot for added moisture and nutrients
  • Gluten-free breadcrumbs or crushed nuts instead of panko
  • Milder chili powder in place of sriracha

Instructions

  1. Prepare the Tuna Mixture: Drain the canned tuna thoroughly to avoid sogginess. In a large bowl, combine the tuna with chopped green onions, minced garlic, egg, panko breadcrumbs, spicy mayo or sriracha, lemon juice, salt, and pepper. Mix gently until all ingredients are evenly distributed without overmixing.
  2. Shape the Cakes: Using your hands or a scoop, form the tuna mixture into small patties about 2-3 inches in diameter. Press firmly so they hold together but avoid compacting too tightly to keep them tender.
  3. Chill the Patties (optional but recommended): Place the formed patties in the refrigerator for about 15 minutes to help them hold their shape during cooking.
  4. Cook to Perfect Crispy: Heat a non-stick skillet over medium heat and add a small amount of cooking oil. Fry the cakes for 3-4 minutes on each side or until the exterior is golden brown and crisp while the inside remains tender.
  5. Drain and Serve: Remove the tuna cakes from the skillet and place them on a paper towel-lined plate to soak up any excess oil. Serve warm with your favorite dipping sauce or garnishes such as sliced avocado, cilantro, or lime wedges.

Notes

  • Don’t overmix the tuna mixture to keep the cakes tender and avoid a rubbery texture.
  • Letting the patties rest in the refrigerator before cooking helps them hold their shape better.
  • Use fresh herbs and fresh lemon juice to brighten the flavor of the cakes.
  • Taste the mixture before shaping to adjust the spice level to your preference.
  • Cook on medium heat for a crispy outside without burning and to ensure the inside cooks through.
