Ingredients

Scale

Base Ingredients

  • 8 oz high-quality dark or milk chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tbsp molasses or honey
  • 2 tbsp unsalted butter

Spices

  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground clove

Optional Coatings

  • Cocoa powder, for rolling
  • Crushed nuts (pecans or walnuts)
  • Shredded coconut flakes

Instructions

  1. Prepare the Ganache Base: Chop the chocolate into small pieces and place in a heatproof bowl. In a small saucepan, gently heat the heavy cream with molasses and butter until just simmering. Pour this mixture over the chopped chocolate and let it sit for a few minutes to soften. Stir until smooth and glossy.
  2. Add the Spices: Mix ground ginger, cinnamon, nutmeg, and clove into the warm ganache. Stir well to evenly distribute the spices and infuse the ganache with the signature gingerbread flavor.
  3. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 2 hours until the ganache is firm enough to handle but still pliable for shaping.
  4. Shape the Truffles: Scoop small portions of the ganache and roll between your palms to form smooth, evenly sized balls. Place them on a parchment-lined tray as you go to prevent sticking.
  5. Coat and Finish: Roll the shaped truffles in your choice of cocoa powder, crushed nuts, or shredded coconut to add texture, flavor, and a decorative finish.

Notes

  • Chill thoroughly to ensure the ganache is firm enough to shape without melting in your hands.
  • Use high-quality chocolate for the best flavor and texture.
  • Adjust spices carefully; start with smaller amounts and taste before chilling.
  • Keep hands cool while rolling by dipping them in cold water if the ganache softens.
  • Store truffles in an airtight container to maintain freshness and avoid absorbing fridge odors.
