Ingredients

Scale

Main Ingredients

  • 1 1/2 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves (or cardamom/nutmeg for variation)
  • 3 large eggs
  • 1/2 cup honey (preferably high-quality wildflower or thyme honey)
  • 1/2 cup Greek yogurt or buttermilk (or plant-based yogurt for vegan option)
  • 1/4 cup vegetable oil or melted butter (use plant-based butter for vegan)
  • 1 tbsp orange zest or 2 tbsp fresh orange juice (lemon zest can be substituted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease your cake pan or line it with parchment paper for easy release.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and cloves to evenly disperse the spices and leavening agents.
  3. Combine Wet Ingredients: In a separate large bowl, beat the eggs until frothy, then add the honey, Greek yogurt or buttermilk, vegetable oil or melted butter, orange zest or juice, and vanilla extract. Mix until smooth and well combined.
  4. Incorporate Dry into Wet: Slowly add the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix as that could toughen the cake.
  5. Bake to Perfection: Pour the batter into the prepared pan and bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool fully before removing it from the pan.

Notes

  • Choose high-quality honey such as wildflower or thyme honey for the best flavor.
  • Use room temperature eggs and yogurt to help the batter blend smoothly.
  • Do not overmix the batter to keep the cake tender.
  • Check doneness starting at 35 minutes, as oven temperatures vary.
  • Allow the cake to cool fully to enhance flavor and ensure clean slicing.
