Ingredients

Scale

Main Ingredients

  • 34 very ripe, spotted bananas (about 1 1/2 cups mashed)
  • 1 cup Greek yogurt (plain, full-fat or low-fat)
  • 1 3/4 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 2 large eggs (room temperature)
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Optional Add-Ins

  • 1/2 cup chopped nuts (walnuts, pecans) or seeds (pumpkin, sunflower)
  • 1/2 cup dark chocolate chips or chunks
  • 1/2 teaspoon ground cinnamon, nutmeg, or ginger (for spiced variation)

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Mash the Bananas: In a large bowl, mash the ripe bananas with a fork until mostly smooth but still slightly textured for bite.
  3. Mix Wet Ingredients: Stir the Greek yogurt, brown sugar, eggs, and vanilla extract into the mashed bananas until fully combined and glossy.
  4. Sift Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and any optional spices to ensure even distribution.
  5. Combine Wet and Dry: Gently fold the dry ingredients into the wet mixture, taking care not to overmix. The batter should be thick but smooth.
  6. Add Mix-Ins: Fold in any optional nuts, chocolate chips, or seeds for added texture and flavor.
  7. Bake the Bread: Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Enjoy: Allow the loaf to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. This helps achieve a firm, easy-to-slice bread.

Notes

  • Use overripe bananas with plenty of brown spots for maximum sweetness and moisture.
  • Do not overmix the batter to keep the bread light and tender.
  • Use room temperature eggs and yogurt for better blending and texture.
  • Test doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  • Allow the bread to cool completely before slicing to prevent crumbling.
