A quick, flavorful Grilled Caprese Chicken with Mozzarella recipe perfect for summer dinners. Juicy grilled chicken breasts topped with fresh mozzarella, ripe tomatoes, aromatic basil, and a drizzle of tangy balsamic glaze create a healthy, vibrant Italian-inspired meal that’s easy to prepare and delicious to serve.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon garlic powder

Toppings

  • 8 oz fresh mozzarella, sliced thick
  • 2 ripe tomatoes, sliced thick
  • Fresh basil leaves, a handful
  • Balsamic glaze, for drizzling

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry to ensure even grilling. Lightly brush them with olive oil, then season generously with salt, pepper, and garlic powder for a flavorful base.
  2. Preheat the Grill: Heat your grill to medium-high, making sure it is hot enough to sear the chicken and create grill marks without burning.
  3. Grill the Chicken: Place the chicken on the grill and cook for about 6-7 minutes per side, depending on thickness. Aim for an internal temperature of 165°F to ensure it is cooked through and juicy.
  4. Add Mozzarella and Tomatoes: When the chicken is nearly done, top each piece with a thick slice of fresh mozzarella and a couple of tomato slices. Close the grill lid and cook for another 2-3 minutes until the cheese softens and slightly melts.
  5. Assemble with Basil and Balsamic Glaze: Remove the chicken from the grill and top with fresh basil leaves. Drizzle balsamic glaze over everything for a classic Caprese finish. Serve immediately.

Notes

  • Use room temperature chicken by letting it sit out for 20 minutes before grilling to ensure even cooking.
  • Don’t skip the olive oil as it prevents sticking and adds flavor.
  • Slice tomatoes thick to maintain texture on top of the chicken.
  • Always use fresh mozzarella for better melting and creaminess.
  • Allow cooked chicken to rest for 5 minutes before serving to redistribute juices.
  • Use a clean grill grate for perfect sear marks and to prevent sticking or tearing.
