Instructions

  2. Mash the Bananas: In a large mixing bowl, mash 3 to 4 very ripe bananas with a fork until smooth but still slightly chunky for texture.

  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and shredded coconut to evenly distribute the leavening agents and coconut throughout the mixture.
  5. Blend Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, being careful not to overmix – just combine until no flour pockets remain for tender bread.
