Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Herbs and Cheese

  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh chives, chopped
  • 1 cup shredded sharp cheddar cheese (or parmesan)

Wet Ingredients

  • 1 cup milk or buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted (or oil)

Instructions

  1. Prepare the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and freshly ground black pepper to ensure an even distribution of leavening and seasoning.
  2. Incorporate Fresh Herbs and Cheese: Add the chopped fresh rosemary, thyme, chives, and shredded cheese to the dry mixture, tossing gently to evenly distribute the herbs and cheese throughout.
  3. Mix Wet Ingredients Separately: In a separate bowl, beat the eggs with milk (or buttermilk) and melted butter until the mixture is smooth and fully combined, preparing a moist base for the bread.
  4. Combine Wet and Dry Mixtures: Gradually pour the wet ingredients into the dry ingredients, folding gently with a spatula just until combined. Be careful not to overmix to maintain a light and tender crumb.
  5. Transfer to a Loaf Pan and Bake: Grease a loaf pan and pour the batter in, smoothing the top lightly. Bake in a preheated oven at 350°F (175°C) for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean and the crust is a golden brown color.

Notes

  • Fresh Herbs Matter: Use fresh herbs for the brightest flavor and aroma.
  • Don’t Overmix: Stir ingredients just until combined to avoid dense bread.
  • Cheese Choice: Choose flavorful cheeses that melt well but don’t release excess grease.
  • Check Doneness Early: Test the bread with a toothpick a few minutes before the timer as oven temperatures can vary.
  • Let It Cool: Cool the bread before slicing to preserve moisture and structure.
