Ingredients

Scale

For the Grits

  • 1 cup stone-ground grits
  • 4 cups water or broth
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1 cup shredded smoked Gouda cheese

For the Shrimp

  • 1 lb raw peeled and deveined shrimp
  • 2 tablespoons jerk seasoning blend (allspice, thyme, scotch bonnet peppers, etc.)
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon cooking oil (vegetable or olive oil)

To Garnish

  • Fresh parsley or cilantro, chopped
  • Lime wedges (optional)

Instructions

  1. Prepare the Grits: Start by bringing 4 cups of water or broth to a simmer in a pot. Slowly whisk in 1 cup of stone-ground grits. Cook gently over low-medium heat, stirring frequently to prevent lumps, until the grits thicken and become creamy, about 20 minutes. Stir in 2 tablespoons of butter, 1/2 cup heavy cream, and 1 cup shredded smoked Gouda cheese off the heat until melted and smooth.
  2. Season the Shrimp: In a bowl, toss 1 lb of raw peeled and deveined shrimp with 2 tablespoons jerk seasoning blend, 2 minced garlic cloves, and 1 tablespoon lime juice. Let the shrimp marinate for 10 to 15 minutes to absorb the flavors.
  3. Cook the Shrimp: Heat 1 tablespoon of cooking oil in a skillet over medium-high heat. Add the shrimp and sear them for about 2 minutes per side until they turn pink and develop slight charring on the edges, being careful not to overcook to keep them tender and juicy.
  4. Assemble the Dish: Spoon a generous portion of the cheesy grits into bowls or plates. Top with the hot, spicy jerk shrimp. Garnish with freshly chopped parsley or cilantro and serve with lime wedges if desired.

Notes

  • Pre-soak grits in water for 30 minutes prior to cooking for an even creamier texture.
  • Use high-quality, fresh jerk seasoning for authentic flavor.
  • Do not overcook shrimp; cook just until opaque to keep them tender and succulent.
  • Stir grits continuously while cooking to avoid lumps and promote creaminess.
  • Add cheese into the grits after removing from heat to prevent separation.
