Vegetables

  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers

  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Meat and Veggies: Brown the ground beef or turkey in a skillet over medium heat. Drain any excess fat. Stir in chopped onions, bell peppers, cumin, chili powder, garlic powder, salt, and pepper. Cook until vegetables are softened and well combined. Set aside to cool slightly.
  2. Assemble the Layers: Spread a thin layer of salsa or enchilada sauce on the bottom of a baking dish. Lay down the first layer of tortillas, spread refried beans over them, then add a layer of the meat and veggie mixture. Sprinkle a generous amount of shredded cheese on top. Repeat layering with tortillas, beans, meat mixture, and cheese until ingredients are used, finishing with a top layer of cheese.
  3. Bake Until Bubbly: Preheat the oven to 375°F (190°C). Cover the casserole with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly. Let the casserole rest for a few minutes before slicing and serving.
