Instructions

  1. Prepare the Apples: Peel, core, and finely chop the apples. Toss them with lemon juice to prevent browning. Mix in sugar, cinnamon, and melted butter until well combined to create the filling.
  2. Roll Out the Dough: Lightly flour your work surface and roll out the puff pastry or pie dough to about 1/8 inch thick. Using a 3 to 4 inch round cutter or glass, cut out circles for the mini pie shells.
  3. Fill and Assemble: Place a spoonful of the apple filling onto the center of each dough circle. Avoid overfilling to prevent spillage. Fold the dough over or top with another circle and pinch the edges securely to seal.
  4. Apply Egg Wash and Vent: Mix egg and water to make the egg wash and brush it over each pie for a glossy golden finish. Cut small slits in the top crust to allow steam to escape while baking.
  5. Bake to Perfection: Place the mini pies on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for about 20 minutes, or until the crust is golden and the filling is bubbly.
