Ingredients

Scale

Pasta & Meatballs

  • 2 cups elbow macaroni
  • 1 to 1.5 cups mini meatballs (store-bought or homemade)

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or gluten-free substitute)
  • 2 cups milk or cream, warmed
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika or smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the pasta and meatballs: Boil elbow macaroni in salted water for about 7-8 minutes until al dente. Meanwhile, heat the mini meatballs in the oven or skillet until warmed through and juicy.
  2. Make the cheese sauce: In a saucepan over medium heat, melt butter and whisk in all-purpose flour until smooth. Gradually add warm milk while whisking constantly to avoid lumps. Let the sauce thicken, then stir in shredded cheddar cheese until melted and silky.
  3. Combine everything: Drain the cooked pasta and return it to the pot or a large bowl. Pour the cheese sauce over the noodles and stir well to coat. Gently fold in the warm mini meatballs. Season with garlic powder, paprika, salt, and pepper to taste.
  4. Optional baking step: Transfer the mixture to a baking dish. Top with extra cheese or breadcrumbs if desired, and bake at 350°F (175°C) for 15 minutes until bubbly and lightly golden on top.

Notes

  • Use sharp cheddar cheese for richer flavor and better melting.
  • Do not overcook pasta to prevent mushiness after combining with sauce.
  • Warm the milk before adding to the roux to reduce lumps.
  • Season gradually and taste as you go to balance flavors.
  • Homemade mini meatballs can elevate the dish’s taste and texture.
