Instructions

  2. Mix the Filling: In a bowl, combine crumbled feta cheese, chopped fresh herbs, black pepper, and lemon zest if using. Mix thoroughly to evenly distribute the flavors.
  3. Assemble the Bites: Lightly brush a phyllo sheet with olive oil or melted butter and layer 2 to 3 more sheets, brushing each layer. Cut the stacked sheets into approximately 2×2 inch squares. Place a spoonful of the feta mixture in the center of each square, then fold the corners up to form small parcels.
  4. Bake Until Golden: Arrange the assembled bites on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes or until the phyllo is crisp and golden brown.
