Instructions

  1. Prepare the dough: Cream the cold unsalted butter and granulated sugar together until light and fluffy. Beat in the egg yolk and vanilla extract. Gradually mix in the all-purpose flour and ground almonds just until combined, being careful not to overmix to maintain a tender texture.
  2. Chill the dough: Wrap the dough tightly in plastic wrap and refrigerate for at least one hour. This firms the dough, making it easier to roll out and cut while preserving its shape during baking.
  3. Roll out and cut cookies: Lightly flour your work surface and roll the dough to about 1/4 inch thickness. Use a round cookie cutter for the bottom layer of each cookie. For the top layer, use a smaller or shaped cutter (such as a heart, star, or circle) to create a window for the Nutella filling.
  4. Bake the cookies: Arrange the bottom and top cookies spaced on a parchment-lined baking sheet. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or until the edges are just turning golden. Remove and let cool completely to retain shape and texture.
  5. Assemble and dust: Spread a generous layer of Nutella onto each bottom cookie. Gently press the cut-out top cookie over the filling to form a sandwich. Finally, sift powdered sugar over the tops for a classic, elegant finish.
