Instructions

  1. Sear the Chicken: Heat olive oil in a large pot over medium-high heat. Season the chicken thighs with salt and pepper. Place them skin-side down and sear until golden brown. Flip and cook the other side briefly. Remove chicken to a plate.
  2. Sauté Aromatics: In the same pot, add diced onions and minced garlic. Sauté until soft and fragrant, scraping up browned bits from the chicken to add flavor.
  3. Combine Rice and Liquids: Add the rice to the pot and stir for about a minute to lightly toast it. Pour in chicken broth and barbecue sauce, mixing thoroughly to distribute the rice evenly.
  4. Return Chicken and Simmer: Place the seared chicken thighs on top of the rice mixture. Cover the pot with a tight-fitting lid, reduce heat to low, and let simmer gently for 25-30 minutes until rice is tender and chicken is thoroughly cooked.
