Scale

Main Ingredients

  • 1 cup orzo pasta
  • 1 bunch fresh asparagus, trimmed and cut into bite-sized pieces
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh parsley or dill, chopped (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Asparagus: Trim the woody ends of the asparagus and cut the stalks into bite-sized pieces. Sauté them in a pan with 1 tablespoon of olive oil and minced garlic over medium heat for about 4-5 minutes until tender-crisp, ensuring they remain vibrant and flavorful.
  2. Cook the Orzo: Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions, usually 8-10 minutes. Drain well, reserving a little pasta water if you wish to loosen the dish later.
  3. Combine Ingredients: Return the sautéed asparagus to the pan and add the cooked orzo. Toss together over low heat with the remaining olive oil, fresh lemon zest, and lemon juice. Stir until everything is evenly combined and warmed through.
  4. Add Feta and Fresh Herbs: Turn off the heat and gently fold in the crumbled feta cheese and chopped fresh herbs like parsley or dill. Season with salt and black pepper to taste, then give it one final toss before serving.

Notes

  • Do not overcook the asparagus; it should remain tender yet crisp to maintain texture.
  • Reserve some pasta water to help bind the ingredients if the dish feels dry.
  • Use good-quality, authentic feta for the best flavor.
  • Serve immediately to enjoy the orzo’s light and fluffy texture.
  • Add lemon zest and juice at the end to keep the citrus flavor bright and fresh.
