Ingredients

Scale

Main Ingredients

  • 1 lb ground chicken
  • 1 cup grated Parmesan cheese
  • 1 cup bread crumbs (or almond flour/gluten-free crumbs for gluten-free option)
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning (or substitute with fresh parsley, basil, or thyme)
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/4 cup ketchup or marinara sauce (optional, for glaze)

Instructions

  1. Preheat and prepare your pan: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper to ensure easy release of the meatloaf once it’s baked.
  2. Mix the ingredients: In a large mixing bowl, combine ground chicken, grated Parmesan, bread crumbs, finely chopped onion, minced garlic, Italian seasoning, milk, egg, salt, and pepper. Use your hands or a sturdy spoon to gently mix until just combined — avoid overmixing to keep the meatloaf tender.
  3. Shape and glaze: Transfer the mixture into the prepared pan, pressing it down evenly. If desired, spread a thin layer of ketchup or marinara sauce on top for a glossy, flavorful glaze.
  4. Bake until golden: Bake the Parmesan Chicken Meatloaf for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown. Let it rest for at least 5 minutes before slicing — this helps retain juices and makes serving easier.

Notes

  • Don’t overwork the meat: Mixing too much can make the loaf dense instead of tender.
  • Use freshly grated Parmesan for the best flavor and melt.
  • Adding milk and egg is key to a juicy and soft meatloaf.
  • Use a meat thermometer to check doneness for perfect cooking and safety.
  • Let the meatloaf rest before slicing to help it hold together better and taste more flavorful.
