Ingredients

Scale

Main Ingredients

  • 1 ½ pounds ground beef (80% lean, 20% fat)
  • ½ cup grated Parmesan cheese (freshly grated preferred)
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • ½ cup marinara sauce (plus extra for topping)
  • ¾ cup bread crumbs (or gluten-free bread crumbs for gluten-free option)
  • 2 large eggs, beaten
  • ½ cup finely diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine ground beef, Parmesan cheese, bread crumbs, beaten eggs, finely diced onion and garlic, Italian seasoning, salt, and pepper. Mix gently with your hands or a spatula until all ingredients are evenly incorporated without overworking the meat.
  2. Shape and Layer the Meatloaf: Divide the mixture in half. Spread half the meat mixture into a loaf pan or shape it on a lined baking sheet. Evenly spread a generous layer of shredded mozzarella cheese and a few spoonfuls of marinara sauce across the meat base.
  3. Add the Top Layer: Cover the cheese and sauce with the remaining meat mixture, pressing lightly to seal in the filling and form a neat loaf shape.
  4. Bake the Meatloaf: Preheat your oven to 350°F (175°C) and bake the meatloaf uncovered for about 50-60 minutes, or until cooked through and the internal temperature reaches 160°F (71°C).
  5. Add Finishing Touches: In the last 10 minutes of baking, spread additional marinara sauce on top of the meatloaf along with more shredded mozzarella for a bubbly, golden finish. Return to the oven until the cheese is melted and slightly browned.
  6. Rest and Serve: Let the meatloaf rest for 10 minutes after baking to allow juices to redistribute. Slice and serve warm with your favorite sides.

Notes

  • Don’t Overmix: Gently combine ingredients to keep the meatloaf tender instead of dense.
  • Use Fresh Cheese: Freshly grated Parmesan and shredded mozzarella melt better and provide superior flavor.
  • Resting Is Key: Allow the meatloaf to rest before slicing so it stays juicy and doesn’t fall apart.
  • Check Internal Temperature: Use a meat thermometer to avoid overcooking and keep the texture perfect.
  • Customize the Sauce: If you like a thicker or more robust marinara, simmer it before adding or use your favorite jarred sauce.
