Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

Produce

  • 1 cup fresh or canned pineapple chunks (drained if canned)
  • 1 bell pepper, sliced into strips
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green onions, chopped

Sauce

  • 3 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Other

  • 2 tablespoons vegetable oil (for sautéing)

Instructions

  1. Prep your ingredients: Chop the chicken into bite-sized pieces and slice bell peppers into strips. Drain pineapple chunks if using canned, and mince the garlic and ginger to have everything ready before cooking.
  2. Cook the chicken: Heat vegetable oil in a skillet over medium-high heat. Add the chicken pieces and sauté until golden brown and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
  3. Sauté vegetables and aromatics: In the same skillet, add a little more oil if needed. Add minced garlic, ginger, and bell peppers, cooking for 2-3 minutes until fragrant and slightly softened.
  4. Make the sauce and combine: In a small bowl, mix soy sauce, honey or brown sugar, rice vinegar or lime juice, cornstarch, and water. Pour this sauce into the skillet with vegetables, add pineapple chunks, then return the chicken to the pan. Stir well and cook until the sauce thickens and coats all ingredients.
  5. Garnish and serve: Sprinkle chopped green onions on top for freshness and color. Serve hot over rice, noodles, quinoa, or cauliflower rice.

Notes

  • Use fresh pineapple for a brighter, juicier flavor compared to canned.
  • Pre-cut vegetables save prep time and preserve crunchiness.
  • Do not overcrowd the pan to allow proper searing of the chicken.
  • Prepare the sauce ahead of time to speed up cooking and stay organized.
  • Adjust sweetness and acidity by tweaking honey and lime juice to taste.
  • Substitute cornstarch with arrowroot powder or flour mixed with cold water if needed.
  • For spice, add red pepper flakes or diced jalapeños during cooking.
