Ingredients

Scale

Potstickers

  • 1012 store-bought or homemade potstickers (choose your favorite filling)

Noodles

  • 4 oz egg noodles, ramen noodles, or rice noodles (for gluten-free option)

Broth

  • 4 cups chicken, vegetable, or miso broth
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tbsp soy sauce (use gluten-free soy sauce if needed)
  • Optional: splash of rice vinegar

Vegetables

  • 1 cup bok choy, chopped
  • 1 cup mushrooms, sliced
  • 2 scallions, sliced

Oils and Sauces

  • 1 tsp sesame oil, plus extra for tossing noodles and stir-frying veggies
  • Oil for pan-frying potstickers

Optional Toppings

  • Chili flakes
  • Sesame seeds
  • Fresh herbs (cilantro, scallions)
  • Thinly sliced red chili

Optional Protein Add-ins

  • Soft boiled eggs
  • Tofu cubes

Instructions

  1. Prepare the Broth: Heat your chosen broth in a pot over medium heat. Add minced garlic and ginger to infuse aromatic flavors. Let it simmer gently while you prepare the other ingredients.
  2. Cook the Potstickers: Heat a non-stick skillet with a little oil over medium heat, then pan-fry the potstickers until the bottoms are golden and crisp. Add water, cover, and steam them until cooked through for a crispy-yet-tender texture.
  3. Cook the Noodles: Boil the noodles according to package instructions. Drain well and toss with a tiny bit of sesame oil to prevent sticking and boost flavor.
  4. Sauté the Vegetables: Stir-fry bok choy, mushrooms, and scallions quickly in a hot pan with a splash of sesame oil until just tender, retaining their vibrant color and crunch.
  5. Assemble the Bowls: Divide the noodles between bowls, ladle in the hot broth, arrange potstickers and sautéed veggies on top, and drizzle with soy sauce or your favorite condiments. Add optional toppings as desired.

Notes

  • Use fresh or freshly thawed potstickers for crispier results.
  • Add a splash of rice vinegar or a pinch of sugar to the broth to balance the flavors perfectly.
  • Toss noodles lightly in sesame oil to keep strands separate and avoid sogginess.
  • Cook vegetables quickly to preserve their texture and vibrant color.
  • Garnish generously with fresh herbs and chili flakes for added complexity and visual appeal.
  • Store leftover broth, noodles, and potstickers separately in airtight containers in the refrigerator for up to 3 days.
  • Freeze cooked potstickers in a single layer on a tray before transferring to a freezer bag; consume within 2 months. Avoid freezing noodles or broth.
  • Reheat broth and noodles gently on stove or microwave and pan-fry potstickers again to restore crispness before assembling.
