For the Crust

  • 1 can (15 oz) pure pumpkin puree
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 can (12 fl oz) evaporated milk or 3/4 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Crust: Combine all-purpose flour, brown sugar, and salt in a mixing bowl. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Press this mixture evenly into a greased 8×8 or 9×9 inch baking pan to form the crust. Bake at 350°F (175°C) until just golden around the edges, about 15 minutes.
  2. Mix the Pumpkin Filling: In a separate bowl, whisk together the pumpkin puree, granulated sugar, room temperature eggs, evaporated milk (or heavy cream), ground cinnamon, nutmeg, ginger, and salt. Beat until smooth and well combined.
  3. Assemble and Bake: Pour the pumpkin filling evenly over the pre-baked crust. Return the pan to the oven and bake at 350°F (175°C) for about 35 to 40 minutes, baking until the filling is set but still slightly jiggly in the center. Avoid overbaking to keep the bars creamy.
  4. Cool and Slice: Allow the bars to cool completely in the pan. For best results, chill them in the refrigerator for at least 2 hours before slicing into neat squares to help them hold their shape and enhance flavor.
