For the Crust
- 1 1/2 cups all-purpose flour
- 2/3 cup brown sugar
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, cold and cut into pieces
For the Filling
- 1 can (15 oz) pure pumpkin puree
- 3/4 cup granulated sugar
- 2 large eggs, room temperature
- 1 can (12 fl oz) evaporated milk or 3/4 cup heavy cream
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- Prepare the Crust: Combine all-purpose flour, brown sugar, and salt in a mixing bowl. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Press this mixture evenly into a greased 8×8 or 9×9 inch baking pan to form the crust. Bake at 350°F (175°C) until just golden around the edges, about 15 minutes.
- Mix the Pumpkin Filling: In a separate bowl, whisk together the pumpkin puree, granulated sugar, room temperature eggs, evaporated milk (or heavy cream), ground cinnamon, nutmeg, ginger, and salt. Beat until smooth and well combined.
- Assemble and Bake: Pour the pumpkin filling evenly over the pre-baked crust. Return the pan to the oven and bake at 350°F (175°C) for about 35 to 40 minutes, baking until the filling is set but still slightly jiggly in the center. Avoid overbaking to keep the bars creamy.
- Cool and Slice: Allow the bars to cool completely in the pan. For best results, chill them in the refrigerator for at least 2 hours before slicing into neat squares to help them hold their shape and enhance flavor.
Notes
- Use room temperature eggs for smooth filling texture.
- Chilling before slicing makes cutting cleaner and easier.
- Press crust evenly for uniform baking.
- Adjust spices to your taste preferences.
- Line your pan with parchment paper for easier removal and slicing.
