Ingredients

Scale

Sausage Filling

  • 400g good-quality pork sausage meat
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or substitute rosemary, sage, or oregano)
  • Salt, to taste
  • Black pepper, to taste

Pastry & Finishing

  • 1 sheet store-bought puff pastry, thawed
  • 1 egg, beaten with 1 tablespoon water (egg wash)

Optional Variations

  • Plant-based mince or crumbled tofu with smoked paprika (vegetarian option)
  • 100g sharp cheddar or Gruyere cheese, grated
  • Chopped fresh chili or cayenne pepper for spice
  • Gluten-free puff pastry and gluten-free sausage alternatives

Instructions

  1. Caramelize the Onions: Slice the yellow onions thinly and cook slowly over low heat in butter until soft, golden, and deeply caramelized, developing their natural sweetness and a rich flavor base.
  2. Prepare the Sausage Filling: In a bowl, combine the caramelized onions with sausage meat, minced garlic, fresh thyme, salt, and pepper. Mix gently and evenly without overworking to keep the texture intact.
  3. Roll Out the Pastry: On a floured surface, unfold the puff pastry sheet and cut into rectangles sized for individual rolls. Handle the pastry gently to keep it cool and flaky.
  4. Assemble the Rolls: Place a spoonful of the sausage and onion mixture along one edge of each pastry rectangle. Roll the pastry over the filling, sealing edges firmly by pressing with fingers or a fork. Brush each roll generously with the egg wash for a shiny, golden finish.
  5. Bake Until Golden: Place the rolls on a lined baking tray and bake in a preheated oven at 200°C (400°F) for 20-25 minutes until puffed and golden brown. Let them cool slightly before serving.

Notes

  • Low and slow cooking of onions intensifies sweetness and flavor complexity.
  • Keep the puff pastry chilled while working to ensure maximum flakiness.
  • Avoid overfilling rolls to prevent them bursting while baking.
  • Applying an egg wash gives rolls a beautiful golden, appetizing crust.
  • Allow rolls to rest for a few minutes after baking to hold their shape when sliced.
  • Can assemble and freeze unbaked rolls for baking fresh later.
  • Reheat rolls in the oven at 180°C (350°F) to retain crispiness—avoid microwaving.
