Egg Salad Base

  • 6 hard-boiled eggs
  • 3 tablespoons mayonnaise

  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1 small fresh jalapeño, finely chopped (seeds removed for less heat) or 1/2 teaspoon chili flakes
  • 1/2 cup cherry tomatoes, chopped (optional)

Crispy Topping

  • 1/4 cup panko breadcrumbs or 1/4 cup fried shallots

Instructions

  1. Boil the Eggs: Place eggs in a pot and cover with cold water by about an inch. Bring to a boil over medium heat, then remove from heat and cover. Let sit for 10 to 12 minutes. Transfer eggs to an ice bath to cool completely to ensure easy peeling and a creamy yolk.
  2. Prepare the Crispy Component: In a small skillet, toast panko breadcrumbs or shallow fry thinly sliced shallots over medium heat until golden brown and crispy. Remove and set aside on paper towels to drain excess oil.
  3. Chop and Mix Fresh Ingredients: Finely chop celery, red onion, jalapeño (remove seeds if less heat), and cherry tomatoes if using. Combine these vegetables in a bowl.
  4. Combine the Salad: Peel the cooled eggs and roughly chop them. In a large mixing bowl, blend chopped eggs with mayonnaise, Dijon mustard, smoked paprika, salt, and pepper. Gently fold in the chopped vegetables and half of the crispy topping.
  5. Add Final Crunch and Spice: Just before serving, sprinkle the remaining crispy topping on the salad to add an irresistible crunch and extra layer of flavor.
