Ingredients

Scale

Base

  • 1 thin rectangular layer of sponge cake or pound cake (about 10x12 inches)

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream, whipped to soft peaks
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Fruit

  • 1 cup fresh strawberries, sliced

Optional Garnishes

  • Shredded coconut
  • Crushed graham crackers
  • Chocolate drizzle
  • Fresh mint leaves
  • Powdered sugar sprinkle
  • Strawberry sauce or melted chocolate
  • Crushed nuts or toasted coconut flakes

Instructions

  1. Prepare the Cake Base: Slice the sponge or pound cake into a thin, even rectangular layer. Lay it flat on parchment paper or a clean surface to prepare for spreading the cheesecake filling evenly.
  2. Whip the Cheesecake Filling: In a bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, blending fully. Gently fold in the whipped heavy cream until light and fluffy, creating a perfect spreadable filling.
  3. Assemble the Sushi Rolls: Spread a generous layer of cheesecake filling evenly over the cake. Arrange sliced fresh strawberries in a single layer across the filling. Starting from one edge, carefully roll the cake using the parchment paper to guide it into a tight sushi roll.
  4. Chill to Set: Wrap the roll tightly in plastic wrap and refrigerate for at least one hour. This step helps the filling set and makes it easier to slice, preserving the spiral appearance.
  5. Slice and Serve: Remove the roll from the fridge and unwrap it. Using a sharp knife dipped in hot water, slice the roll into 1-inch thick pieces like sushi. Arrange on a serving platter and add your preferred garnishes.

Notes

  • Choose ripe, firm strawberries for best flavor and color.
  • Ensure cake layer is evenly thin to avoid bulky rolls.
  • Whip heavy cream to soft peaks for a light, smooth filling.
  • Chill the roll adequately to achieve firm slices with good flavor melding.
  • Use a sharp knife dipped in hot water before slicing for clean cuts.
