Whipped Feta with Roasted Garlic

Whipped Feta with Roasted Garlic is a creamy, tangy, and flavorful dip featuring smooth whipped feta cheese combined with sweet, mellow roasted garlic. Perfect as a spread on crusty bread, a salad topper, or a party dip, this recipe is simple to prepare and boasts a luxurious texture with rich, balanced flavors.

Ingredients

Scale

Cheese Base

  • 200g block feta cheese
  • 2 tablespoons Greek yogurt or cream cheese

Roasted Garlic

  • 2 whole garlic bulbs
  • 1 tablespoon extra virgin olive oil (for roasting garlic)

For Creaminess and Flavor

  • 2 tablespoons extra virgin olive oil (for mixing)
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste

Optional Herbs and Add-ins

  • Fresh oregano or thyme, chopped (optional)
  • Crushed red pepper flakes or harissa (optional, for a spicy kick)
  • Fresh basil, dill, or chives (optional, for herb infusion)
  • Smoked paprika or charred roasted peppers (optional, for smoky flavor)
  • Toasted pine nuts or walnuts (optional, for nutty crunch)

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off whole garlic bulbs to expose the cloves, drizzle with olive oil, wrap loosely in foil, and roast for 30-40 minutes until the cloves are soft, golden, and caramelized.
  2. Prepare the Feta Base: While garlic roasts, crumble the block feta cheese into a food processor or a mixing bowl if using a hand mixer.
  3. Add Creamy Elements: Spoon in Greek yogurt or cream cheese, add 2 tablespoons of olive oil, and pour in fresh lemon juice to help create a smooth, creamy texture.
  4. Incorporate Roasted Garlic: Squeeze the softened roasted garlic cloves out of their skins and add them to the feta mixture. Blend everything together until glossy and whipped.
  5. Season and Blend: Sprinkle salt and pepper to taste, then blend one last time. Add optional herbs or spices now if desired to customize the flavor.
  6. Serve or Store: Transfer the whipped feta to a serving bowl, drizzle with a little olive oil, and enjoy immediately or refrigerate to let flavors develop further.

Notes

  • Use block feta cheese for a creamier whip rather than pre-crumbled feta.
  • Roast garlic to mellow sharpness and add sweet, caramelized notes.
  • Chill feta and cream cheese before whipping for a fluffier texture.
  • Add olive oil gradually to control dip consistency and avoid it getting runny.
  • Use fresh lemon juice for a bright, vibrant flavor instead of bottled lemon juice.
